Champagne to accompany canapes and appetiser

White Burgundy (Meursault, Puligny-Montrachet, Chassagne-Montrachet) is a traditional pairing for delicate fish and butter sauces, but Grüner Veltliner, dry Riesling or white Rioja would all pair well with the Japanese flavours

To accompany the lamb, claret (Bordeaux left bank) is traditional but Northern Rhone Syrah would also work well, as well as Ribera del Duero, Barolo or a Lebanese red wine
