Clear chicken soup

Ingredients

Soup

• 250ml dashi
• 250ml chicken stock (or you can use 500ml dashi)
• 1 tbsp sake
• 1 tbsp light soy sauce
• 1 tbsp mirin

Garnish

• 1 chicken thigh
• 1 tbsp sake
• Greens (use watercress, wasabi leaves or baby spinach)
• Lemon zest (or yuzu zest if you can find it)
• Carrot (sliced very thinly)
• Daikon (or radish, sliced very thinly)

Instructions

Prep: assemble the garnishes

1. Slice the carrots thinly and put to one side
2. You may cook the chicken in advance - you can marinade it and poach it, or fry it and put it to one side

Balance the soup

1. Bring the dashi stock to a gentle simmer
2. Add the sake, soy sauce and mirin and taste
3. Adjust if the balance of seasoning to your taste
4. Cook the raw vegetables (e.g. carrots and daikon) for 2 minutes so that they are tender, not crunchy
