Tuna tataki with karashi su-miso sauce

Ingredients

Karashi su miso sauce

• 10g Japanese mustard (karashi) or English mustard
• 25g sushi vinegar (or 1 tsp sugar + 1 tbsp rice vinegar)
• 75g white miso

Tuna marinade

• 250g tuna loin fillet
• 1 tbsp soy sauce
• 1 tbsp mirin
• 1 tsp toasted sesame oil

To garnish

• Rocket or micro herbs (e.g. micro coriander, micro shiso)
• Black and white sesame seeds (or shichimi togarashi)

Instructions

Prep: make the karashi su miso sauce

1. If you do not have sushi vinegar, dissolve the sugar into the rice vinegar.
2. Mix the mustard with the miso, then add the sushi vinegar
3. Taste the sauce - it should be rich in savoury umami (miso), with a gentle punch (mustard) and touch of sweet (sugar) and sour (vinegar)

Prep: Sear and marinade the tuna

1. Boil the kettle
2. Slice the tuna into fillets, about 15cm long and 4cm across (height and width)
3. Place the tuna in a colander or sieve and pour the boiling water over all of the surfaces so that they change colour
4. You can also cook the surface of the tuna by searing it very quickly in a very hot, oiled frying pan or with a blowtorch.
5. Mix the marinade ingredients (soy sauce, mirin and sesame oil) in a flat bottomed container (eg. ice cream tub).
6. Place the seared tuna into the marinade, coat and leave for at least 30 minutes to season the tuna.
7. You can do this in advance and place the tuna in the fridge to marinate

Prep: slice the avocado

1. Cut the avocado in half around the stone
2. Remove the stone and peel the skin away
3. Slice the avocado thinly
4. Dress lightly with a squeeze of lime juice (especially important if you are doing this well in advance) 

Plate up and serve

1. Place the sliced avocado onto the plate
2. Slice the tuna carefully and place onto the plate
3. Dress the tuna with any excess marinade
4. Dab the plate with karashi su-miso
5. Garnish with herbs and leaves (e.g. rocket, baby shiso)
6. Sprinkle with sesame seeds or togarashi spice blend
